Saturn Port-Pear-a-dise Dessert

This savory red wine poached pear recipe is the perfect dessert for any occassion--a perfect pairing with Chumeia's Tawny Port.

Poached Pear Ingredients:
1 1/2 cups Chumeia California Zinfandel
1/2 cup sugar
2 T lemon juice
2 t vanilla
4-6 Bosc or Anjou Pears
1 Blue Cheese wedge (creamy style recommended like Gorgonzola Cremificato)

Combine first 4 ingredients and bring to a boil. Once the wine mixture is boiling, turn heat down to a simmer and add the pears. Simmer pears for 10 minutes an then turn pears and simmer for an additional 8-10 minutes--until they are tender and easily poked through with a fork. Remove pears and let them cool.

Honey Caramel Sauce Ingredients:
1 1/2 cups honey
1/2 cup heavy cream
2 T butter
1 t vanilla
Orange Zest (this brings out the orange notes in the Port)

Combine honey and cream in heavy saucepan; cook and stir over medium-high heat until mixture foams, about 5-10 minutes. Stir in butter, vanilla and orange zest. Arrange the pears and blue cheese on a serving platter and drizzle with the honey caramel sauce. Enjoy!
