Zinfandel-Calypso Grilled Jerk Hamburgers with Mango Salsa
Burger Ingredients:
2 Tablespoons jerk seasoning (recipe below)
1 lb. ground beef
4 sesame seed hamburger buns toasted
1/4 cup Mango salsa (recipe below)
Thoroughly mix ground beef and jerk seasoning in a large bowl. Shape hamburger into four patties. Grill patties until desired doneness (juices should run clear). Place a burger on bottom half of each roll and top with mango salsa. Close sandwiches. Serve with sweet potato chips.
Jerk Seasoning
1 tablespoon onion flakes
1 tablespoon onion powder
1 tablespoon ground thyme
2 teaspoons salt
1 teaspoon coarsely ground black pepper
1 teaspoon cayenne pepper
1 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
2 teaspoons granulated sugar
2 teaspoons dried chives or green onions
Mix all ingredients together thoroughly and store in a tightly sealed glass jar. Makes 3 tablespoons.
Mango Salsa
1 cup diced very ripe mango
2 Tablespoons minced red onion
1 Tablespoon chopped fresh cilantro
1 Tablespoon lime juice
Ensure that the mango is ripe. Mango is ripe when it is slightly soft to the touch and the skin displays nice colors of yellow, orange and red. Combine all ingredients in bowl.
